The story

Ebbeh is The Gambia's most beloved street-corner restorative, sold from roadside pots in Banjul and Serrekunda as an invigorating late-afternoon reviver. Created by coastal communities along the Atlantic shoreline, it relies on the natural starch of cooked cassava to bind sweet marine flavors and sour fruit acids. Street vendors routinely mash a portion of the boiled cassava directly in the pot with a wooden pestle to create its signature rich, velvety body.
