The story

Shared passionately by both Somali and Afar communities across Djibouti, fah-fah is the quintessential evening restorative served after long desert journeys or at large family gatherings. Traditionally cooked in massive aluminium cauldrons over charcoal embers, it balances lightness with intense depth from marrow bones. Cooks deliberately avoid heavily browning the goat meat at the start, allowing the clean essence of whole spices and rendering tallow to clarify and perfume the broth naturally.
