The story

Originating among the nomadic Afar pastoralists of the inland volcanic scrublands of the Tadjourah and Dikhil regions, ga'ambo is one of the oldest bread traditions in the Horn of Africa. Baked without ovens, the bread is traditionally formed into a dense, thick disc and cooked directly atop flat river stones that have absorbed intense heat from an acacia wood fire. This primordial baking method produces a distinct smoky aroma and an uneven, deeply charred crust that protects a soft, steaming crumb meant to be torn and dipped into rich stews, buttermilk, or melted ghee.
