The story

Originating among the Batooro and Banyoro kingdoms of Western Uganda, Firinda is an esteemed dish reserved for milestone cultural functions, royal banquets, and honored guests. While modern cooks sometimes blend unpeeled beans, true traditional firinda requires manually removing the seed coats after soaking to achieve an impossibly pale, velvet texture. The hallmark aroma comes from ehabwemi (traditionally smoked cultured cow ghee), which is clarified and cold-smoked using specific dry smoldering grass over a clay vessel.
