The story
Among the Iteso people of Eastern Uganda, Atap serves as the indispensable daily foundation of communal sustenance, eaten with rich groundnut and smoked fish gravies. Technical mastery relies on the precise ratio of stone-ground finger millet to sun-dried fermented cassava flour, which provides stretch and elasticity to the earthy grain. Historically mingled with a flat hardwood stick (ecomai) in an earthenware pot, properly executed atap possesses a distinct mahogany-purple hue and springy crumb without a single dry flour pocket.
