The story

Originating from the Bagisu people along the lush slopes of Mount Elgon in Eastern Uganda, Malewa is a sacred ceremonial dish integral to the biennial Imbalu circumcision rites and festive home gatherings. Wild mountain bamboo shoots (Yushania alpina) are harvested, parboiled, and fire-cured over smoking hearths to preserve them for months. Technically, the shoots require pre-cooking with local rock salt (makwang) or traditional vegetable-ash filtrate to break down fibrous toughness and soften the heavy phenolic smoke into a savory sweetness.
