The story

Originating among the Songhai people along the Niger bend in Gao, Ga-Oudji is the definitive tonic for chilly desert nights and post-illness recuperation. The broth is prized for its penetrating peppery heat, which combines roasted native peppercorns with the medicinal warmth of Selim grains. Traditionally, the mutton must contain bone marrow, which renders slowly into the cracked grains over low embers to produce a silky, strengthening broth.
