The story

Gbodo is a staple comfort dish of rural farming families in the Ouham and Ouham-Pendé prefectures of the Central African Republic during the dry months. Sweet potatoes harvested at season's end are sliced and sun-dried on woven mats into durable chips called 'cossettes' to preserve carbohydrates year-round. Coarsely pounded and simmered with red palm oil and local river fish, the dish delivers an earthy balance of sweetness, smoke, and rich lipid density.
