The story
Among pastoralist groups such as the Dinka and Nuer across the Bahr el Ghazal and Upper Nile floodplains, Giyad is an essential preservation technique deployed during seasonal dry-season cattle migrations (toic). Lean cuts of cattle are cured and dried under the relentless sun to endure months of transport without spoiling. Historically, pastoralist cooks rely on natural lactic acid bacteria present during initial curing to lower pH rapidly, imparting a distinct sour savoriness that softens during subsequent long, gentle braising.
