Gnon (Steamed Savory Millet and Wild Leaf Patties)
Earthy, steamed pearl millet flour cakes blended with chopped sorrel leaves, fragrant soumbala, and served warm with chili oil.
The story
Gnon is a heritage culinary creation of the Bwa and Bobo peoples residing in the fertile Western and Boucle du Mouhoun regions of Burkina Faso. Consumed extensively during dry-season communal agricultural festivities and post-harvest ceremonies, it provides a portable, fiber-rich accompaniment to grilled meats and piquant dips. Technical mastery involves carefully folding acidic wild leaves, such as sorrel or roselle greens, directly into the coarsely granulated millet dough, allowing the natural leaf moisture and slight acidity to activate the steam-leavening of the cakes.
