The story

Originating among the pastoral Fulani (Peul) transhumance herders of northern Burkina Faso's Sahel region, this nutrient-dense preparation serves as both a thirst-quencher and an energy-sustaining midday meal. Traditionally prepared in wooden mortars, the dough relies on the heat-resistant starches of pearl millet spiced heavily with alligator pepper and cloves. A key technical subtlety lies in pounding the partially steamed dough while still piping hot, which gelatinizes the amylopectin and creates smooth spheres that disperse effortlessly into curdled milk without clumping.
