The story

Brewed across Burkina Faso by female master brewers known as dolotières among the Mossi, Bobo, and Gurunsi peoples, Dolo is both a daily communal social drink and an essential medium for ancestral libations. Poured from dried calabash bowls (calebasses), the drink binds community gatherings, weddings, and funeral ceremonies. Technically, Dolo relies on a complex mixed fermentation of Saccharomyces yeasts and lactic acid bacteria (Lactobacillus), giving it a crisp, sour profile similar to Belgian lambic rather than Western malt beers.
