The story

Widespread throughout the Mossi plateau and Sahelian savannas of Burkina Faso, jus de pain de singe (known as toedo in Mooré) is the quintessential celebration drink served cold at baptisms and community feasts. The baobab fruit naturally dehydrates on the branch inside woody pods, yielding chalky pulp clusters packed with organic acids and natural pectin. Master beverage makers never boil the pulp; instead, cold or lukewarm extraction preserves the ascorbic acid profile and produces an exceptionally smooth, frothy body.
