The meticulous seven-day process relies on wild airborne yeasts and malted red sorghum (chimera) to drive sequential lactic and alcoholic fermentations. A crucial cultural and technical tradition is the 'masese' stage: filtering through a woven grass strainer (tswanda or chisero) yields an opaque, velvety, mildly tart drink brimming with B-vitamins and living probiotics.
