Unlike dessert bananas, the endemic East African highland cooking banana (ibitoki) is starchy, firm, and requires slow thermal breakdown to develop its subtle sweetness. Historically, the dish is cooked nestled under a blanket of banana leaves, which traps aromatic volatile oils and imparts an unmistakable earthy perfume to the mash.
