Ikivuguto (Traditional Fermented Curdled Milk)
Thick, tangy, and deeply velvety fermented curdled milk infused with traditional woodsmoke notes, cooling the palate alongside classic Rwandan fare.
The story
Deeply ingrained in Rwanda's historical Banyarwanda pastoralist traditions, Ikivuguto honors the sacred bond between herders and their Inyambo cattle. Historically brewed in smoked wooden vessels called 'Ibyanzi' or cleaned calabash gourds, it is offered to guests to establish kinship and enjoyed daily during morning and midday meals. Authentic Ikivuguto relies on mesophilic lactic acid bacteria that flourish at ambient tropical temperatures rather than high heat, yielding a naturally rich, custard-like coagulum.
