The story

Central to community rituals throughout eastern and western Rwanda, Urwagwa is the quintessential ceremonial drink shared at dowries (Gusaba), weddings, and communal harvesting bees (Umuganda). Ripe brewing bananas are historically ripened in underground earthen pits lined with embers and banana foliage to concentrate fructose. The fermentation uses malted red sorghum as both an amylase catalyst and a wild inoculum, yielding a distinctively tart, low-alcohol beverage served in communal gourds.
