The story
Throughout the rugged central highlands of Burundi, impeke is the sacred drink of harvest rituals, communal reciprocity, and ancestral blessings. It is traditionally served from a single large earthenware jar or hollowed gourd, with guests drinking side by side through long, natural hollow reed straws called imiseke. The technical foundation of authentic impeke lies in a dual-stage mashing process where gelatinized, unsprouted sorghum porridge is saccharified solely by the live diastatic enzymes of sprouted red sorghum malt under warm, ambient conditions.
