The story

Brewed throughout the fertile banana-growing valleys of Ngozi and Gitega, Urwarwa is the cornerstone beverage of traditional Burundian dowries (gusaba) and communal harvest rites. Historically, beer bananas (ibitoki vy'inzoga) were ripened underground in pit ovens lined with smoking embers to hydrolyze starches rapidly before extraction. Traditional brewers rely strictly on the enzymes naturally present in toasted finger millet malt (urusororo) to convert the viscous banana sugars into an effervescent, slightly sour alcoholic nectar.
