The story
Originating among fishing communities along the southern shores of Lake Tanganyika near Rumonge, Uburobe is an ancient staple prized for long-distance transport. Cassava undergoes days of water retting to detoxify cyanogenic glucosides and develop lactic sourness before it is milled. Wrapping the gelatinous, pre-cooked cassava paste inside smoked banana leaves seals in moisture, enabling the loaf to remain fresh without refrigeration.
