The story

Rooted deeply in the pastoralist heritage across the high-altitude plateaus of Butanyerera and Kirundo, Ikivuguto is consumed daily alongside boiled tubers and beans. Historically, milk was fermented in cured bottle gourds (ibisabo) that were smoked with specific aromatic woods like umuhe to sterilize the interior and impart a signature campfire aroma. Technical mastery lies in catching the curd at peak lactic acidity before whey separation degrades its creamy texture.
