The story

Across the mist-covered Highveld and rolling Middleveld of Eswatini, Incwancwa has sustained Swati families as the quintessential morning restorative for generations. Prepared in large cast-iron pots over open hearths, it is traditionally served to fuel field laborers before the morning heat sets in. The distinctive sour profile comes from spontaneous lactic acid fermentation of the maize slurry (inhlama), a biochemical process that also dramatically increases the bioavailability of essential B vitamins and minerals in the grain.
