The story

During the late-summer green maize harvest across Eswatini, open-air vendors at the bustling Manzini Market and roadside stands along the MR3 highway steam Sinkwa Semmbila in giant metal drums. Freshly harvested green mealies (field corn) are cut and ground at the peak of milkiness, capturing natural sugars before they convert into dense starch. Traditional cooks line the steamer base with residual bare corn cobs and silk, which infuses the steaming dough parcels with deep roasted-corn aromatics.
