The story

Across the Lubombo and Manzini regions of Eswatini, tinkhobe is sold steaming hot in repurposed enamel cups at bus terminals and roadside stalls. This timeless field snack provided sustenance to ancestral Swati pastoralists undertaking seasonal transhumance journeys across the Middleveld. Technically, the dual-seed simmering requires precise salting only in the final 30 minutes, as premature salinity hardens the outer seed coats (testa) of the indigenous jugo beans.
