The story
Ubiquitous across the volcanic plains of Mauritius, jus de canne is pressed to order at makeshift roadside stalls skirting endless sugarcane plantations. Local press operators feed freshly peeled sugarcane stalks through heavy metal rollers alongside whole local limes known as limon ti-bassin (calamansi). The sharp acidity of the citrus and the heat of crushed ginger are essential to cut through the heavy natural sucrose and prevent rapid enzymatic browning.
