The story
Hailing from the arid volcanic highlands of Tadjourah and Obock in northern Djibouti, Kadaaduk is an ancient specialty of the nomadic Afar people. Prepared primarily during the cool post-rainy grazing seasons when succulent wild herbs sprout across the hillsides, it celebrates the pastoralists' deep relationship with goat herds and wild forage. Historically, Afar cooks chop the meat meticulously by hand with a traditional curved dagger rather than grinding it, preserving juicy texture and savory pockets of rendered fat within the dense herb melange.
