The story
Celebrated across the savannahs of the Central African Republic among the Banda and Gbaya peoples, Kanda ti Kpe is a centerpiece dish prepared for communal harvest festivals and significant family rites. While 'kanda' often refers to spiced ground meat meatballs elsewhere, this vegetal version highlights the rich protein of roasted cucurbit seeds melded with tart greens. Technically, the raw shelled seeds must be lightly dry-toasted before pounding to release their natural oils, which allows the paste to set into a firm, custard-like texture without needing binding agents.
