Kandolo (Cardamom-Spiced Sweet Potato Dumplings)
Golden, pan-glazed Zambian sweet potato dumplings delicately spiced with aromatic cardamom, cinnamon, and toasted peanuts.
The story
Prepared predominantly in Eastern Zambia and among Chewa and Tumbuka communities during the cooler post-harvest months, Kandolo elevates the humble sweet potato into a revered festive confection. Traditionally, freshly harvested orange and white sweet potatoes are roasted in hot ashes, pounded in wooden mortars with roasted groundnuts, and rolled into small cakes. The addition of aromatic green cardamom and warming spices showcases historical Indian Ocean trade influences that traveled up the Zambezi valley, marrying indigenous tubers with fragrant pantry staples.
