The story
Originating among northern trade routes and perfected by urban street vendors across Conakry, kankankan is Guinea's quintessential grill-side seasoning for skewered meats. Traditionally, meat roasters (dibiteries) rely on pressed, roasted groundnut meal to create a seasoning that clings tenaciously to meat juices rather than sliding off over open embers. Aromatic forest spices like calabash nutmeg and piper guineense are toasted alongside hot red chilies, creating an explosive rub that both tenderizes and crusts charred meats.
