Kanyama (Crispy Fried Grasshoppers with Chili)
Crunchy, savory wild grasshoppers pan-fried with spicy pili-pili, red palm oil, and aromatic alliums.
The story
In the copperbelt savannahs of Haut-Katanga and Lualaba provinces, the emergence of grasshoppers during seasonal rain transitions sparks communal nocturnal harvests beneath high-powered incandescent lamps. Once considered purely a survival delicacy of Bemba and Sanga communities, it has elevated into a prized, high-protein urban beer snack savored alongside cold lagers. Technically, the grasshoppers must have their wings and thorny tibial spurs stripped while retaining the plump thorax, followed by a dry parboil in their own moisture before final crisping.
