Made from whole dried calyces of Hibiscus sabdariffa, this beverage balances brilliant acidity with deep botanical and warming notes. Rather than merely steeping as a light tea, South Sudanese culinary tradition calls for a controlled rapid decoction of the calyces with whole crushed spices, followed by an extended cold rest to extract maximum anthocyanin pigments and rounded fruit acids.
