The story
Known ubiquitously throughout Rwandan households from Kigali to rural Nyanza, kawunga is the reliable culinary backbone of everyday family nourishment. Consumed primarily at lunch to fuel heavy farm or trade labor, it is celebrated for its density and neutral profile that perfectly balances acidic greens like isombe. Skilled home cooks intentionally allow a paper-thin crust (*igikoko*) to toast at the bottom of the dry pot, imparting a faint nutty smoke to the finished porridge.
