The story
Originating in the rugged Aurès Mountains and High Plateaus, Khlii was crafted by Chaoui and semi-nomadic pastoralists to secure a high-protein larder after the autumn slaughter. Strips of lean beef were heavily spiced and dried under arid desert winds before being submerged in rendered fat for winter preservation. A critical technical nuance is the slow confit in clear tallow until every trace of water evaporates, preventing mold formation during long-term storage.
