The story
Rooted in the pastoral traditions of Chaoui Berbers and Saharan nomads, klila is an ingenious survival food invented to preserve surplus spring milk for harsh winters. The milk is naturally soured into lben, gently heated until the proteins seize, and then dried in mountain sun on woven esparto mats until rock-hard. Unlike fresh cheeses, fully cured klila keeps without refrigeration for years and requires a brief soak or simmering to bloom its deep, savory umami.
