The story

In the southern oases of Tozeur, Kebili, and Gabès, legmi is harvested in the cool pre-dawn hours from the crown of selected date palms (Phoenix dactylifera). Drunk immediately for breakfast during the harvest season, it is a cherished morning tonic prized for its delicate sweetness and deep mineral complexity. Technically, the sweet sap (legmi helou) begins wild airborne lactic and yeast fermentation within hours of extraction; traditional harvesters coat collection jugs with lime or keep the liquid on crushed ice to stall alcohol development into sour legmi.
