The story
Hailing from the riverine Teke and Lingala-speaking fishing communities along the Congo River, Maboké is the centerpiece of festive weekend gatherings. Freshly caught capitaine is seasoned and enveloped in tough Marantaceae (ngungu) leaves before slow steaming over glowing embers. Crucially, the leaves do not merely act as wrappers; when subjected to heat, they release essential tannins and volatile herbal oils that naturally tenderize the fish and prevent the delicate flesh from drying out.
