The story

Traditionally cooked using ndizi mshale, a specific green cooking banana prized for retaining its texture without turning sweet, this stew unites rich pasture-fed beef with earthy mountain produce. Chagga cooks intentionally avoid excessive stirring once the bananas are layered in the pot, preventing the delicate plantain starches from bursting and making the broth overly viscous.
