Mbege (Fermented Banana and Finger Millet Beer)
An ancient, effervescent Chagga brew of simmered sweet bananas and sprouted finger millet with a tangy, tart finish.
The story
Originating on the fertile volcanic slopes of Mount Kilimanjaro, Mbege is the definitive ceremonial drink of the Chagga people. It is central to cultural rituals, serving as the required currency for dowry negotiations (poso) and milestone celebrations. Historically, the beverage relies on overripe Ndizi Ng'ombe bananas and sun-dried sprouted finger millet (kimea), which supplies the exogenous enzymes needed to saccharify the thick banana mash before natural wild fermentation takes hold.
