The story
Across the highlands and valleys of Lesotho, Mafi is a venerated dairy staple prepared by Basotho homesteads in clay vessels or calabashes called 'lekuka'. Consumed at breakfast or alongside stiff pap (papa), it provided essential nutrients and probiotics to pastoralist communities in harsh mountain climates. Technically, the spontaneous lactic fermentation relies on native mesophilic cultures that naturally curdle raw cow's milk without exogenous rennet, creating tender porcelain-like curds suspended in thin whey.
