The story

Mandazi are the undisputed king of morning tea culture in Rwanda, found stacked under glass cases in every neighborhood café (alimentation) and bustling transit hub. Eaten with steaming cups of spiced black tea or rich ikivuguto (fermented milk), they provide an energising start for students and commuters alike. A key baker's technique in the Great Lakes region is allowing the rolled dough to rest twice—once after kneading and once after shaping—which creates the signature hollow, tender crumb without grease absorption.
