The story
Introduced to South Africa by indentured Indian laborers arriving in KwaZulu-Natal in the late 19th century, atchar has evolved into an essential nationwide culinary staple. It is devoured across township street stalls and home kitchens alike, especially slathered onto kota (hollowed loaves), vetkoek, and slap chips. The foundational technique relies on strictly unripe, fibrous green mangoes with soft, immature stones that are sun-salted to purge moisture and prevent the pickle from fermenting prematurely.
