The story

Across northern Angola, particularly among the Bakongo people of Uíge and Zaire provinces, Maruvo is the quintessential welcoming drink for communal gatherings, weddings, and traditional dispute resolutions. Harvested directly from the cut spathe of Elaeis guineensis or raffia palms, the raw sap ferments spontaneously within hours due to wild airborne yeasts. Historically, elders judge the quality of maruvo by the thickness of its natural froth and its delicate balance between early floral sweetness and late-stage lactic acidity.
