Brewed across rural homesteads in South Sudan by Dinka, Nuer, and Jur women, Merissa is central to community life, powering cooperative farming work groups (nafeer) and marking milestone harvest ceremonies. This ancient beverage bridges the line between food and drink, providing dense B-vitamins, calories, and active lactobacilli to agricultural laborers. The technical brewing secret lies in the two-component fermentation process combining zumboro (a deeply caramelized, cooked gelatinized sorghum mash) and madida (malted pearl millet flour whose active enzymes saccharify and ferment the grain).
