The story

Mintoumba is an ancestral specialty of the Bassa ethnic group from the Center and Littoral Regions, celebrated as a nourishing travel provision sold along Cameroon's major highways. Historically crafted to preserve cassava during hunting expeditions and long river voyages, it remains a beloved roadside staple eaten warm with fresh avocado. The technique relies on controlled submerged fermentation of bitter cassava tubers to detoxify the roots and develop a distinct sour, lactic tang before blending with unrefined palm oil.
