The story

Common across the Gezira agricultural heartland and Nubian communities of central and northern Sudan, Mish is a beloved morning dish eaten with warm bread and sweetened black tea. Traditionally made by culturing leftover cow or goat milk curds in porous unglazed clay jars called qullahs, the fermentation develops a distinctive piquancy through lactic acid bacteria. The addition of whole black cumin and fenugreek seeds is not just for flavor; their potent antimicrobial properties historically protected the ambient ferment from spoilage in desert temperatures.
