The story

Hailing from Northern Sudan and the ancient historic lands of Nubia, gurrasa is the quintessential daily bread for breakfast and lunch. Unlike the ultra-thin kisra of the central plains, gurrasa is intentionally thick, soft, and aerated, designed specifically to capture rich vegetable tagines, beef stews, or date syrup. The traditional dough uses simple unleavened or lightly rested wheat flour, relying on rapid skillet expansion and a wet, spoonable consistency to yield its distinct crumpet-like honeycomb interior.
