The story
Originating among the riverine communities along the Nile in Northern and Central Sudan, Madida Hilba is traditionally prepared for nursing mothers during the postpartum confinement period (al-arba'in) to stimulate lactation and restore strength. It is also cherished across Sudanese households on chilly winter mornings as a comforting breakfast. Technically, the fenugreek seeds must undergo a prolonged initial simmer in water before milk is introduced, leaching excessive bitterness while softening the seeds into tender, nutty beads that seamlessly meld with the velvety flour-thickened custard.
