The story

No table in Guinea-Bissau is considered fully dressed without a bowl of freshly ground Molho de Jindungo com Limão. Consumed universally across urban Bissau and inland villages alike, this fiery condiment cuts through rich stews like Caldo de Mancarra (peanut stew) and oily grilled coastal barracuda. Traditional cooks employ a heavy wooden pestle and mortar (pilão) to shear the fresh pepper skins and seeds, which emulsifies their pungent essential oils directly with the sharp lime acid and vegetable oil.
