Peixe Seco Fumado (Fermented Smoked Fish Relish)
A smoky, savory relish of flaked artisanal dried fish simmered gently with pungent alliums, tomatoes, and red palm oil.
The story
In the coastal Bijagós archipelago and the rural inland river villages of Guinea-Bissau, Peixe Seco Fumado is revered as an essential condiment that transforms plain boiled upland rice into a nourishing feast. Fish such as bonga shad or catfish are traditionally sun-cured, fermented slightly, and heavily smoked over mangrove wood embers on raised racks called 'fumadouros'. This preservation technique imbues the fish with a deep glutamic depth that seasons family meals during the lean agricultural months before the rice harvest.
