The story
Hailing from the historic butcher districts of Cairo such as Al-Madbah and widely prepared across the Nile Delta, mombar is an iconic street delicacy and an indispensable fixture of the Eid al-Adha feast. The labor-intensive dish showcases Egypt's zero-waste whole-animal butchery tradition, transforming cleaned beef or sheep intestines into savoury stuffed sausages. Crucially, master butchers invert the casings before stuffing so that the inner ribbon of natural tallow melts directly into the raw rice during simmering, richly flavouring the grain from within.
